This is a great way to relax and not spend too much time in the kitchen.

Muffuletta Caesar Sandwich

Prep time: 20 min Servings: 8

  • 1 jar (16 ounces), mild or hot Giardiniera, drained.
  • 1 jar (12 ounces), roasted red peppers. Drained and chopped.
  • 1 can (6 ounces), chopped green olives, drained, and diced
  • 1/2 cup celery, diced
  • 1/4 cup chopped fresh parsley
  • 1 loaf Italian bread (1 lb)
  • 8 ounces sliced provolone cheese
  • 8 ounces Genoa salami sliced
  • 8 ounces sliced mozzarella cheese
  • 3 packages (9.4 ounces each) Fresh Express Caesar Chopped Salad Kits
  • 8 ounces sliced mortadella
  1. Combine giardiniera with red peppers and olives, celery, celery, and 2 tablespoons of reserved giardiniera fluid in a bowl; mix well.
  2. Slice bread horizontally in half; take out about 1/2 inch of bread to make a bowl. Top the bread bowl with olive lettuce. Layer with salami, provolone cheese and mozzarella cheese.
  3. Toss greens from one salad set into a bowl and add salad dressing. Toss together toppings. Layer with mortadella in the top bread bowl.
  4. Flip the top half of the bread and place fillings on the bottom half. Cover tightly with plastic wrap and press down to compress. Allow flavors to combine for 15 minutes.
  5. Slice sandwich into eight wedges
  6. Serve the remaining salad kits as a side dish.


Calamari Caesar Salad

Prep time: 5 min

Cooking time: 15 minutes

Servings: 4

  • 1 box (10 ounces). Breaded Calamari
  • 1 package (9.8 ounces) Fresh Express Caesar Salad Kit
  • 8 Campari tomatoes, sliced
  • 4 lemon wedges
  1. Bake calamari as directed on the package.
  2. Toss the greens with the salad dressing in a large bowl. Toss in toppings.
  3. Split the salad equally among four plates. Each plate should be topped with calamari and tomatoes. Serve with the sauce from the calamari packet.
