Melted 1 tablespoon of extra virgin coconut oil

In a large bowl, combine the following ingredients in order: almond milk, coconut cream (melted), coconut flour, vanilla extract, almond meal, and coconut flour. Heat a mini egg pan lightly oiled over medium/high.

- Half a cup of heavy whipping cream
- Divided into 4 equal portions, this is the amount of sugar you need.

In a small bowl, mix the water and spirit with 1 teaspoon of sugar. It may not completely dissolve. Place the sliced strawberries in a small bowl. Stir in the sugar-sugar mixture. While the strawberries macerate, set the bowl aside.
In a bowl with a capacity of 2 to 3 cups, combine the heavy cream and remaining sweetener. Add vanilla. Whip until stiff. Whip the sourcream in a smallish dish to loosen. Add 1/4 of the whipped-cream to the sour-cream and whisk gently. Fold in half of the remaining cream using a large spoon or rubber spatula. Fold the remaining whippedcream into the sour-cream mixture. The filling can now be refrigerated for up to one day. Makes about 1 1/2 cups
Fold the sides to cover. Spread 1/4 of whipped cream over the top of one crepe. Each crepe is folded again corner to corner like a handkerchief. Place them on a separate plate.
